It is another week of gaming so that means that there will be more snacking.
In last weeks Game Night Snackdown article I included recipes for queso dip with meat, pepperoni snacks, & hummus stuffed pita pockets. You can find those recipes I mentioned here: Game Night Snackdown.
Since last week I did mainly savory snacks, I kind of wanted to change it up this week with some simple & sweet snacks.
This first sweet treat is a recipe I have been using for decades. I believe my mother has been using this same recipe since I was a little boy.
1: Simple Fruit Dip: 1 cup non-fat plain yogurt, 1/4 cup sugar, 1 tbsp. orange zest, 1/4 cup orange juice, & 2 cups whipped topping. This should serve up to twenty or so hungry gamers.
Place the non-fat plain yogurt into a medium sized mixing bowl. Zest the orange over the bowl, then cut the orange in half & squeeze the juice of both halves of the orange into the mix. If worried about the seeds in the orange just cup your hand underneath the orange as you squeeze to catch the seeds. Mix the added ingredients.
After mixing slowly stir in the thawed whipped topping. You can using any brand of whipped topping. I recommend creamy Cool Whip. After everything is mixed together, set in the refrigerator for three hours to chill.
After three hours, remove from the refrigerator & serve with your favorite fruit. I recommend fresh berries & pineapple.
Everyone loves a good cookie, I know I do. So here is a quick no-bake cinnamon cookie that will be ready before you can say Settlers of Catan.
2: No-Baked Chocolate, Peanut Butter cookies: 1/2 cup milk, 2 cups sugar, 3 tbsp. unsweetened cocoa powder, 3 tbsp. crunchy peanut butter, 1/2 cup butter, 3 cups rolled oats, & 1 tsp. vanilla extract.
In a 3-qt. pan combine, milk, sugar, cocoa, butter, & peanut butter. Stir ingredients over medium heat & bring to a boil. Let mix boil for 90 seconds without stirring. Remove pan from heat & stir in the rolled oats & vanilla. Mix ingredients until oats are coated.
Using a cookie scoop or a teaspoon drop the cookies onto a sheet of wax paper & let cool. This cookie recipe alone will fill the stomach of your guests. Makes about 4 1/2 dozen cookies.
Here is a recipe that will completely blow your mind. So simple & easy.
3: Nuttela Peanut Butter Tortilla Bites: 2 tbsp. powder sugar, 1/4 cup Nutella, 1/4 cup creamy peanut butter, & 1 large flour tortilla. Please make sure that the Nutella & peanut butter is at room temperature, makes them easier to spread.
Place the flour tortilla flat onto a sheet a wax paper. Spread on the peanut butter & the Nutella. After spreading on the ingredients grab one side of the tortilla & start to roll it up until it meets the other side of the tortilla. Roll the wax paper around the tortilla & refrigerate for 20 minutes.
Remove from the refrigerator & slice into 8 pinwheels. Dust each pinwheel with powder sugar. Just one of these will make 8 pinwheels so if you have a bunch of guests then I recommend making three or four of these. As a bonus you can slice a banana & place on each pinwheel to make one tasty hors d’oeuvres.
So there you have it. Three simple sweet recipes. Next time you have a game night make some of these simple snacks instead of loading yourself down with store bought chips or cookies.
