Lets get ready to snack!

Okay, gamers, it is once again time for another round of snack recipes from yours truly.

I feel that it is essential for gamers to eat while they are gaming. For one it helps them relax a little more & for another, I believe feeding the hunger feeds the mind. Thus giving better focus to the player for any level of gaming.

So let us jump into this week’s snack recipes.

1: Flatbread: 16 oz. thawed frozen pizza dough, 1/2 cup shredded mozzarella cheese, 1/2 cup shredded parmesan cheese, 1 small red onion sliced thinly, 8 oz. cherry tomatoes cut in halves, 1 cup fresh baby spinach roughly chopped, 1 tsp. freshly chopped parsley, 1 tsp. freshly chopped oregano, 4 tbsp. olive oil, salt, & pepper.

Preheat oven to 400 degrees.

Roll out pizza dough into a rectangle on parchment paper sprayed with non-stick cooking spray. Sprinkle the 1/2 cup of mozzarella onto dough. Arrange the onions, cherry tomatoes, & baby spinach evenly over the dough.

Mix the parsley, oregano, & olive oil together. Drizzle the olive oil mix over the vegetables. Sprinkle salt & pepper to taste.

Place flatbread into the oven for 15-18 minutes or until crust is crisp & golden.

Once flatbread is done cut into strips & serve.

It isn’t too hard to make your own pizza. It is actually pretty quick & easy to do. A few things to help you out though. Pizza dough can be found in many forms fresh, frozen, or in a can. Several of my local grocers carry fresh made pizza dough which can be found in the bakery department. Those same grocers also have frozen pizza dough bu the frozen rolls, or you can purchase the Pillsbury pre-made canned pizza dough by the canned biscuits. Any of these will work.

You can use any number of veggies on this flatbread. You could use zucchini, bean sprouts, green or red bell peppers, & mushrooms. I like a good fresh, sliced variety of mushrooms.

2: Corn Dip: 5 slices cooked & diced bacon, 1 tbsp. butter, 1 can drained sweet corn, 1/2 cup diced vidalia onion, 1/4 cup dice red bell pepper, 4 oz. cream cheesed cubed, 2 tbsp. milk, 2 green onions chopped, salt & pepper.

In a skillet add butter, corn, onion, & bell pepper over medium heat. Stir vegetable mix until they are tender. This may take four or five minutes. Stir in cream cheese & milk until combined. If mix seems thick add a pinch more of milk. When it is the consistency of your liking remove from heat.

Stir in the green onion then add salt & pepper to taste. Sprinkle the chopped bacon on top & serve with pita chips.

3: Stew in a Cup: 1 can of Pillsbury Grand biscuits & 1 20 oz. can Dinty Moore beef stew.

Pre-heat oven at 375 degrees.

Spray a regular size muffin tin with non-stick cooking spray. Place one biscuit into each of the cups. Press each biscuit down & up the side of the muffin cup to basically form a biscuit cup. Spoon beef stew into each of the cups.

Bake in oven for fifteen to eighteen minutes or until biscuits are golden. Cool for five minutes before serving.

If you don’t want stew then you can add your favorite chili. I’ve tried a handful of canned soups & I think my favorite so far is Campbell’s Chunky Salisbury Steak & Potato.
